Sunfed® Bull Free Beef Bourguignon


Here’s a simple, wholesome, high-protein recipe for a delicious to cook a delicious, heartwarming Sunfed® Bull Free Beef™ bourguignon.

INGREDIENTS

  • 1 packet of Sunfed® Bull Free Beef Raw Prime Diced
  • 300g of potatoes, diced
  • 2 carrots, peeled and diced
  • 2 green onions, diced
  • 6 cloves of garlic
  • Balsamic vinegar
  • 2 TBS Tomato paste
  • 2 cups red wine
  • 31/2 Cup vegetable broth
  • 2 TBS Plain flour
  • Thyme
  • 2 tsp sugar
  • Salt and pepper to taste

 METHOD

Pour a generous drizzle of your favourite oil into your pot, once it’s nice and hot, add Sunfed® Bull Free Beef™ and listen to it sizzle! Just like animal beef, our meat undergoes the maillard reaction as it cooks, browning with heat and elevating it's taste, aroma, and appearance. In order to make sure our Bull Free Beef™ browns as cleanly as possible, try to avoid stirring and moving the meat until you're sure it’s ready.



Once one side is nicely browned, flip it over and let the other side cook just as well. The inside of the meat should stay red! Once cooked, remove from the pot and set aside in a small bowl. Cover with foil to make sure it stays warm until needed. 


Add the garlic, onions, and a hefty drizzle of balsamic vinegar to the pot. Stir frequently to mix any of the remaining browned meat that might still be in the pot. Once the onion has softened (5 minutes), add tomato paste and stir until fragrant (1 minute). 

Add the flour and stir thoroughly until all of it has been incorporated into the mix. This is to make sure the stew thickens up as you cook it. If you’re wanting a slightly thicker stew, add an extra tablespoon of flour.

Next, add the vegetable broth, thyme, sugar, and wine. Bring to a boil, then lower the heat and cover. Leave for at least 20 minutes, stirring occasionally. If you want the stew to reduce slightly, leave the lid off as it simmers.

Once your stew has simmered, add the carrots and potatoes to the mix and cover once again, leaving for at least 25 minutes. Check regularly, as you’re wanting the potatoes and carrots to be soft enough that a fork can cleanly go through them.


Finally, add your browned pieces of Sunfed® Bull Free Beef™. The browning process from earlier ensures that the meat will perfectly take on the flavours of your stew, opening up and softening as it does so. Cover the pot once more and leave the meat to simmer. After 15 minutes the Sunfed Beef should be wonderfully juicy and tender.
